All four events share this shape — status becomes "open", "accepted", or "canceled" on the other three.

These currently only fire when your provider is Stripe and Stripe sends its own quote update back — not from this platform's quote API directly, and not on other providers. Poll GET /quotes/{id} if you need quote state on a non-Stripe provider.
